Whenever I want something hearty, I come back to this dish. Noodles and tender beef come together in one pan. It’s simple, filling, and full of flavor.

Why you’ll love this recipe

  • Egg noodles are perfect for stir-frying because their porous surface absorbs sauce beautifully, giving you flavorful, well-coated noodles in every bite.
  • Chinese chili pepper adds a deep, aromatic heat that elevates the dish beyond simple spiciness, making it bold, fragrant, and incredibly satisfying.
  • This dish tastes even better as leftovers, as the flavors continue to deepen and soak into the noodles, making it perfect for meal prep.

Key Ingredients

  • Chinese chili powder: Provides layered heat and aroma; without it, the dish lacks depth, but chili flakes with a touch of paprika can substitute.
  • Beef: Fatty cuts like ribeye create tenderness and richness; leaner cuts can be used but may result in a less juicy, flavorful dish.
  • Egg noodles: Their texture holds sauce well; substituting with regular noodles works, but the flavor absorption and bite will be less satisfying.

Key Steps

#1: Marinate beef briefly to enhance flavor and tenderness before cooking.

#2: Boil the egg noodle and then quickly rinse under cold water they don’t clump together

#3: Stir-fry noodles and combine everything at the end for balanced texture.

Marinate Sauce

Instructions

  1. In a bowl, marinate the thinly sliced beef with the prepared marinade sauce. Mix well and let it rest for 5–10 minutes to tenderize.
  2. Bring a pot of water to a boil and cook the egg noodles for about 2 minutes until just tender. Drain and rinse under cold water to stop the cooking process, then set aside to dry.
  3. Heat a pan with a little oil over medium heat. Add the eggs and scramble until just cooked. Remove from the pan and set aside.
  4. In the same pan, add more oil and heat over medium-high heat. Add the marinated beef, spread it out, and let it sear undisturbed for 2–3 minutes until browned. Flip and cook for another 2–3 minutes until fully cooked.
  5. Once the beef is browned, add the chopped chili pepper, minced garlic, bean sprouts, and cooked noodles to the pan.
  6. Season the noodles with dark soy sauce for color, soy sauce for flavor, chili powder, and a pinch of salt.
  7. Toss everything together until the noodles are evenly coated and slightly browned, about 1–2 minutes.
  8. Return the scrambled eggs to the pan, mix well, and serve the beef fried noodles hot..
