  1. Rinse the azuki beans, rice, peanuts, red dates, and lotus seeds thoroughly in cold water. And soak Azuki beans in water for over 8 hours
  2. Add all rinsed ingredients into the Instant Pot and add 4 cups of water.
  3. Set the Instant Pot to Porridge or Stew mode and cook for 40 minutes on high pressure.
  4. Allow the pressure to release naturally; for best results, let it sit on "Keep Warm" for 2+ hours or overnight.
  5. Stir in the dried goji berries and rock sugar while the porridge is still hot.
  6. Mix until the rock sugar is completely melted and serve warm.
