Why you’ll love this recipe

  • Textural Contrast: The “velveted” beef is incredibly tender, providing a professional restaurant mouthfeel against the soft eggs and jammy tomatoes.
  • Natural Umami Sauce: As the tomatoes break down, they release juices that combine with the beef marinade to create a rich, savory sauce without needing heavy thickeners.
  • Nutritional Powerhouse: This meal provides a perfect balance of high-quality protein, healthy fats, and antioxidants in a single serving.

Key Ingredients

  • Roast cut or lean part: Thinly sliced against the grain and marinated with cornstarch to ensure the beef stays “slippery” and soft.
  • Vine-Ripened Tomatoes: Using very ripe tomatoes is key, as they break down faster into a saucy consistency.
  • Shaoxing Wine & Soy Sauce: These aromatics add depth to the beef and balance the natural acidity of the tomatoes.

Key Steps

  • #1: The Velvet Marinade. Let the beef sit with cornstarch and oil to create a protective barrier that locks in moisture during the high-heat stir-fry.
  • #2: Tomato Breakdown. Sauté the tomatoes with a pinch of sugar to help them release their juices and develop a deep, jammy flavor.
  • #3: The Final Fold. Combine the beef, tomatoes, and eggs quickly at the end to ensure the eggs absorb the sauce without becoming rubbery.
